      OUR APRIL CHEESE SELECTION.

      COUPOLE

Named for its domed shape, Coupole is dense and creamy and has a mild, wrinkly rind that contributes to yeasty and nutty flavors. Coupole's paste is delicate and citrusy with a fudgy texture that contrasts with the flavor of the rind. Founded in the 1980s by Allison Hooper and Bob Reese, Vermont Creamery started with a delicious fresh chevre and has continued to grow to offer an ever-expanding array of dairy products. Over 30 years later, and with more than 100 national and international awards, Vermont Creamery produces some of the most revered goat cheese

      WHITNEY

One of the things we love about Jasper Hill Farm is its commitment to its people. In fact, on their website, it clearly states people are their main ingredient. Whitney is a smooth, meltable cheese named for Jasper Hill Farm's most senior employee, Tim Whitney.

Whitney is made in the style of mid-elevation mountain cheeses of the Alps. The curds are rinsed with water during the cheesemaking process to slow the acidification and create a smooth, elastic texture. As the cheese matures, the wheels are washed with a mixture of morge, a cultured brine, and spent yeast from 'La Garagista' tanks, a terroir-driven natural winemaker in Vermont. The results are cheese with a mellow milky flavor and a fruity, funky finish.

      Style: Semi-firm
      Milk Type: Raw Cow

      INVIERNO

Invierno is inspired by Basque shepherds, who produce the famous sheep's milk cheese Ossau Iraty in the Pyrenees Mountains. David Major crafts Invierno in the winter months from the milk of his herd of 300 sheep in the rolling hills of Vermont and blends it with organic cow's milk from a neighboring farm. The paste is smooth and dense, and the flavor is bright and nutty, with a hint of citrus.
