OUR MARCH CHEESE SELECTION
Founded in 2002 by Mike Koch & Pablo Solanet, Firefly Farms sources fresh goat milk from family farms within 30-miles of the creamery, all of which is free from added hormones or antibiotics. They pay farmers a premium for this high-quality milk. Firefly has a deep commitment to the environment and sustainability and has high animal welfare and worker welfare standards. Merry Goat Round is a brie-style, approachable cheese with a fresh milky flavor and mushroomy notes. Its silky texture is decadent.

Chällerhocker (pronounced "holler hocker"), is an aged cow's milk cheese from Käserei Tufertschwil in the canton of St. Gallen, Switzerland. After many years of making the classic Swiss cheese Appenzeller, master cheesemaker Walter Raas longed to do something more unique. With a few tweaks of the recipe, including leaving the milk unskimmed, Walter created Chällerhocker. This complex addictive Swiss cheese is dense and smooth and tastes of brown butter, roasted cashews, and caramelized onions.

Ossau Iraty is a delicious sheep's milk cheese produced in the French Pyrenées. The name comes from the production area that includes two neighboring provinces: the Ossau Valley, located in the Bearn and Iraty, a forested area in the French Basque Pyrenées. Milk for production comes from the local breeds of sheep, the Manech, and Basco-Bearnaise. The texture of Ossau Iraty is smooth, and dense and supple. Ossau Iraty is sweet and nutty, with flavors of grass, flowers and savory vegetal notes.
