WESTCOMBE CHEDDAR

Westcombe Cheddar is one of three West Country cheddars to hold the Artisan Somerset Cheddar designation from Slow Food. This means it is produced within production rules which honor authenticity and tradition.  The dairy has operated for over one hundred years, and in the 1980's the Calver Family produced block cheddar. They then decided to return to their roots and produce raw milk, bandaged wrapped cheddar. Westcombe Cheddar has a deep, complex flavor with a mellow lactic tang and long notes of citrus, hazelnut, earth, and caramel. The texture is toothsome, with a smooth finish that lingers on your palate.

      OMA

      Oma is an American original, made by Sebastian von Trapp on his family's dairy farm in Waitsfield, Vermont. Oma means grandmother in German and is named in honor of their grandmother. It is an approachable washed-rind cheese and is made from the organic milk of the von Trapp's Jersey cows. Oma's flavor balances sweetness and pungency with flavors of ham, roasted nuts, and cultured butter. The interior is soft and pudding-like.

      POINT REYES AGED GOUDA

      Point Reyes Farmstead cheese is well known for blue cheese and over the last few years has begun to expand their offerings. Their Gouda is not widely distributed yet because it is made in limited amounts and when owner Lynn Giacomini-Stray offered us some for Cheesemonger Box we jumped on it! Point Reyes Gouda has a firm, pale gold interior dotted with crunchy protein crystals. The texture while hard is also creamy and it smells of roasted pineapple. Point Reyes Gouda is full flavored and tastes of cooked cream, caramel, and nuts.
