    PIPER'S PYRAMIDE

    Named for founder Judy Schad's red-haired granddaughter Piper, Piper's Pyramide is a beautiful pyramid shape goat cheese that is sprinkled with a touch of paprika. Piper Pyramide has a heavenly texture, with a pillowy softness that is light and fluffy when young and turns fudgy as it ripens. This hand ladled cheese tastes of sweet cream, a hint of citrus, and an underlying earthiness. Judy Schad is among a small group of cheesemakers in the United States who were at the forefront of the farmstead cheese revolution. She has been instrumental in growing the American artisan cheese movement.

    Piper's Pyramide is a winner of many American Cheese Society awards.

     DUTCH FARMSTEAD

    Cato Corner Farm makes all their cheese by hand with raw milk from their forty-five cows, mostly Jerseys, on their small Connecticut farm. Their herd grazes freely, enjoying a rich diet of fresh pasture grasses, local hay, and a small number of grains. We've been working with Cato Corner Farm for over ten years, and their rustic, handmade farmhouse cheeses are staples in our shops.

    Dutch Farmstead has a natural rind with a semi-soft texture, milky flavor, and a nice acidic tang. Dutch is terrific on a cheese board but also great in the kitchen. Try it in a mac & cheese or a grilled cheese sandwich.

    WILLOUGHBY


    Named after Lake Willoughby, one of Vermont's most beautiful lakes, Willoughby is a small washed rind disk made from pasteurized cow's milk. Ploughgate Creamery initially created it, and after a devasting fire, they ceased cheese making and sold the recipe to the folks at Jasper Hill Farm. Jasper Hill tweaked the recipe to make it theirs and now produce Willoughby year-round.

    Willoughby has an assertive flavor with notes of sweet cream, tropical fruit, and a slight funkiness. Its texture is silky and a bit gooey. The rind is often a bit tacky and aromatic. It makes an excellent substitute for the French cheese Reblochon in the famous Savoie dish Tartiflette.
