    SOFIA

    We think Capriole Farm makes some of the best goat cheese in the world and Sofia is truly a cheesemonger favorite. Ask any cheesemonger in the United States. This slightly aged chèvre makes us all swoon! Hand-ladled and ash ripened (which is neutral in flavor) with flavors of citrus and cream and a texture that melts in your mouth. Goat cheese doesn't get much better.

    ASHBROOK

    Farms for City Kids Foundation is a program that brings students from nearby cities up to the farm in southwestern Vermont to spend time helping with farm chores while learning. The farm also produces cheese, which helps support the foundation. Ashbrook is a pungent Morbier-inspired cheese and is distinguished by the line of vegetable ash running through the center of the cheese. Spring Brook uses their own raw Jersey cow's to produce a supple, semi-soft cheese that is milky and bright with a slightly funky finish.

    Verano is inspired by Basque shepherds who produce the famous sheep's milk cheese Ossau Iraty in the Pyrenees Mountains. David Major crafts the seasonal Verano from the summer milk of his herd of 300 sheep in the rolling hills of Vermont. The paste is smooth and dense, and flavors vary depending on where the sheep were grazing. We have noted a toasted nut, grassy, sweet and herbaceous flavor in these wheels.

This preserve combines local apples, cranberries, honey, orange zest, ginger and bay leaves for a perfect blend of sweet and tart. It pairs superbly with an assortment of meats and cheeses for both sweet and savory dishes.

    Inspired by the Mediterranean, Firehook Crackers are baked with simple ingredients. They are crunchy, well-seasoned and the perfect foil for every cheese.
