    FLORA 

    Inspired by Selles-sur-Cher from France’s Loire Valley, Flora is a little goat disk with a coat of gray ash underneath its rippled white geotrichum rind. The ash reduces the surface acidity, making it easier for the geotrichum to grow. It’s the geotrichum that helps ripen and soften the cheese, encouraging the oozy layer, just under the rind. Flora is new to the Capriole goat cheese line which includes iconic cheeses like Wabash Cannonball, Piper's Pyramide and Sofia. When young, Flora is tart, light and grassy and then as it matures the flavors become more intense and mushroomy.

        PAWLET

        Pawlet is a workhorse cheese. It is excellent on a cheese platter, delicious for a quick snack and excellent for melting into just about any recipe. Made from raw, Jersey cow's milk Pawlet has a rich semi-soft texture and flavors that are grassy, buttery, nutty and slightly meaty. Fun fact- in 1864 Consider Bardwell Farm was the site of America's first dairy cooperative. They produced cheddar which was loaded onto railcars and sent to New York City. The farm is now owned by Angela Miller and her husband, Russell Glover.

        At the foot of the Alps in Bad Oberdorf, Bavaria Arturo Chiriboga, a native of Ecuador, crafts Chiriboga Blue based on an old recipe for Bavarian Blue. This mild creamy blue is intensely sumptuous and buttery, with a dense, mouth-coating texture that is reminiscent of ice cream. It has flavors of sweet cream and grass, with a balanced blue spice.

        For thirty years American Spoon has handcrafted small batches of preserves in copper kettles from Michigan grown fruit. Their Apricot jam is made from crushed apricots grown by Marty Jelinek out on Michigan's Leelanau Peninsula and has a splash of orange juice, honey, and orange blossom water. It is excellent with all cheeses.


        CASTLETON CRACKERS SIMPLY WHEAT

        Made in VT by our friend Whitney Lamy, Castleton Crackers are perfect for spreading with your favorite cheese. These hand rolled, and hand cracked crackers are simple and buttery and pair well with all cheeses.
