O'BANON

O'Banon is a riff on the classic French goat cheese Banon. Both are fresh chèvre wrapped in chestnut leaves, but cheesemaker, extraordinaire, Judy Schad takes O'Banon and puts a Kentuckiana spin on it by soaking the leaves in Kentucky Bourbon instead of eau-de-vie. The result is a fresh chèvre with lots of character. Its texture is dense, clay-like and smooth. The leaves lend some tannic, herbaceous notes to the flavor that finishes with a hint of vanilla from the Kentucky Bourbon.

    RUPERT

    Rupert is an award-winning firm cheese made on Consider Bardwell Farm in Vermont. In the 1800's Consider Bardwell Farm was the site of the first cheesemaking cooperative in Vermont. A century and a half later, Angela Miller and Russell Glover have renewed the tradition with pasture-based raw milk from their goats and neighboring cow dairies.  Their farm is certified "Animal Welfare Approved." Rupert has a smooth, firm texture that is easy to crave. Its flavors are buttery and sweet with hints of butterscotch, nuts and tropical fruit.

    WILDE WEIDE GOUDA

    Jan and Roos van Schie produce this traditional Boerenkaas (farmhouse) Gouda on a lake island known as Zwanburgerpolder in the south of Holland. The herd is made up of Montbeliarde and Red Friesians cows, which are not common breeds for Gouda production. The cows feed on pastures all year long, and their organic, raw milk becomes a Gouda with incredible character and flavor. Look for butterscotch, grass and pineapple notes and a crunchy texture from the protein crystals (tyrosine) that develop as the cheese ages. Since it is made on an island, the wheels get to the mainland by rowboat!

      Sometimes called fruit butter, fruit paste is smoother and more intensely flavored than jams. Sidehill Farm handcrafts their products in Brattleboro, Vermont from fresh fruit and their plum paste makes a beautiful addition to any cheeseboard, complementing a wide range of cheese. You can also dissolve the paste, creating a beautiful glaze for meats.
