    OMA

    Oma is an American original, made by Sebastian von Trapp on his family's dairy farm in Waitsfield, Vermont. Oma means grandmother in German and is named in honor of their grandmother. It is an approachable washed-rind cheese and is made from the organic milk of the von Trapp's Jersey cows. Oma's flavor balances sweetness and pungency with flavors of ham, roasted nuts, and cultured butter. The interior is soft and pudding-like.

    CHÄLLERHOCKER

    Chällerhocker (pronounced "holler hocker"), is an aged cow's milk cheese from Käserei Tufertschwil in the canton of St. Gallen, Switzerland. After many years of making the classic Swiss cheese Appenzeller, master cheesemaker Walter Raas longed to do something more unique. With a few tweaks to the recipe, including leaving the milk unskimmed, Walter created Chällerhocker. This complex addictive Swiss cheese is dense and smooth and tastes of brown butter, roasted cashews, and caramelized onions.

    CACIO DI BOSCO AL TARTUFO


    IL Forteto (the fort), is a commune tucked away in Barberino di Mugello, near Florence, Italy. They have been making this pecorino in the farmers' cooperative since 1977. Pecorino is the name of a family of Italian cheeses made from sheep's milk. The word derives from Italian Pecora meaning "sheep." Cacio di Bosca al Tartufo is studded with black truffles, and their earthy, garlicky flavor is balanced by the sweet, nutty sheep cheese. Watch out; it is super addictive!
