          WALDEN

          The newest cheese from farmstead producer Sequatchie Cove, Walden, is made in Tennessee's Sequatchie Valley. Walden has a silky, velvety paste and a delightfully edible rind. It's complex with walnut and woodsy notes and finishes with a hint of buttered white mushroom.

          BRABANDER

          Brabander goat's milk Gouda is made in the Brabant region of southern Holland from the pasteurized milk of Saanen goats. It is aged by our dear friend Betty Koster, who, with her husband Martin, owns two amazing cheese shops in Amsterdam. Betty and Martin work closely with the producers to ensure adherence to excellent practices and the production of high-quality cheese. They select their wheels and age them at slightly warmer-than-normal temperatures, which Betty believes helps develop greater complexity and depth of flavor. Brabander is dense and creamy, with flavors of nuts, caramel, hay, and a touch of gaminess.

          WRÄNGEBÄCK

          Wrångebäck is Sweden's oldest cheese brand and is made at Almnäs Bruk, an 8,800-acre farm in Sweden founded by monks in 1225. After World War II, cheesemaking was discontinued on the farm, and the farm began to sell fluid milk to the commodity market. In 2008, as milk prices declined, Almnäs Bruk turned back to cheesemaking and revived the recipe for Wrångebäck. Wrångebäck is unique, somewhere between an Alpine style and a cheddar. Flavors are deep and rich with notes of dark toffee and cream. The texture is dense, toothsome, and a bit crunchy from the tyrosine (protein) crystals.
