    HUMBOLDT FOG

    An American classic, Humboldt Fog from Cypress Grove, is an ash-ripened goat cheese that is the creation of cheesemaker Mary Kheen, who in the 1970s moved to Humboldt County, California, in search of a back to land life with her young children. She acquired a few goats, and as they multiplied, she decided to make cheese with the excess milk. A trip to France and a dream inspired Humboldt Fog. The flavors of Humboldt Fog develop with age. When young, the cheese is tangy and lemony with notes of herbs and buttermilk. As it matures, flavors intensify and can become quite assertive, especially just under the rind.

    CALDERWOOD

    A collaboration between cheesemonger Ann Saxelby and Jasper Hill, Calderwood wheels are washed with brine for six months in the cellars before being coated in hay and sealed in cryovac. After an additional four months of aging, the cryovac is removed, and the cheeses are left to dry and form a natural rind in the cellars. Calderwood is an expression of terroir, the idea that the flavors in real foods are a reflection of the place they are grown and produced. The cheese is firm with a complex flavor that hints of chestnuts, caramel, and earth. The hay lends a toasty, tropical fruit finish.

    The hay comes from Jasper Hill Farm's cropping center which is home to the country's only hay dryer. The Randi Albert Calderwood Cropping Center is the first of its kind in the United States. Jasper Hill Farm was inspired by a hay dryer in Parma Italy, a region whose cheese calls for grass-fed milk, but whose climate is too rainy for making consistently dry hay. Dry hay helps Jasper Hill feed their herd of cows and eliminates the hay from fermenting. The fermented feed can be troublesome for raw cheesemakers. In 2018 Calderwood took second place best in show at the American Cheese Society's annual competition.

    WILLOUGHBY

    Named after Lake Willoughby, one of Vermont's most beautiful lakes, Willoughby is a small washed rind disk made from pasteurized cow's milk. Ploughgate Creamery initially created it, and after a devasting fire, they ceased cheese making and sold the recipe to the folks at Jasper Hill Farm. Jasper Hill tweaked the recipe to make it theirs and now produces Willoughby year-round.

    Willoughby has an assertive flavor with notes of sweet cream, tropical fruit, and a slight funkiness. Its texture is silky and a bit gooey. The rind is often a bit tacky and aromatic. It makes an excellent substitute for the French cheese Reblochon in the famous Savoie dish Tartiflette.
