Lillé is made by Vermont Farmstead Cheese Company, in South Woodstock, VT. It is inspired by a French cheese called Coulommiers, which is like a thicker brie. Vermont Farmstead handcrafts Lillé from the milk of their herd of cows. Its texture is soft and creamy with bright milky flavors of butter and cream which finishes in a vegetal funk. The rind contributes flavors of white button mushrooms. |

Ossau Iraty is a delicious sheep's milk cheese produced in the French Pyrenées. The name comes from the production area that includes two neighboring provinces: the Ossau Valley, located in the Bearn and Iraty, a forested area in the French Basque Pyrenées. Milk for production comes from the local breeds of sheep, the Manech, and Basco-Bearnaise. The texture of Ossau Iraty is smooth, and dense and supple. Ossau Iraty is sweet and nutty, with flavors of grass, flowers and savory vegetal notes. |

Bayley Hazen Blue is a buttery, natural-rinded raw cow's milk blue cheese made by Jasper Hill Farm in Vermont. Its texture is firm, dense, and fudgy. Reminiscent of Stilton, Bayley's flavors are approachable since the spiciness of the blue mold is balanced by buttery, sweet, milky notes. We often detect roasted hazelnuts, chocolate, fresh grass and sometimes licorice. |
